Spatchcocking (flattening) a whole chicken before cooking ensures even cooking and cuts roasting time by about 30-40 minutes.

Household tip type: In the Kitchen

Step 1:

  • Lay a chicken on a cutting board, breast side down
  • Using poultry shears, cut along both 
sides of the backbone and remove it.

Step 2:
  • Open bird out, cut side down, and flatten by pressing gently but firmly on the breast with the palm of your hand.

Step 3
  • If you want to ensure the chicken stays flat during cooking (not essential), push two skewers, in a criss-cross fashion, through the leg and wing.
