'Tis the season to get fruity, and nothing spells summer holidays quite like a sugar-rimmed cocktail glass

And life just doesn't get any better if it’s filled to the brim with an exotic mix of boldly coloured bliss.

Thankfully, there’s no shortage of exotic fruits on local shores, meaning you can stock up on all kinds of plump produce and tropical treats to add to your favourite concoction. The emphasis is on refreshing, fresh and oh-so-icy cocktails, and bursting-with-flavour berries are leading the pack in the summer’s seasonal offerings.

Pick n Pay is stocked with these antioxidant-packed powerhouses and they go down an absolute treat in just about any kind of drink.

Very berry
This combination of berries, lime and rum evokes fond memories of sun-kissed skin and long, languid afternoons. It’s a fabulously simple treat to whip up in a flash – and it looks pretty good too!

  • 1 punnet (400g) PnP Mixed frozen berries
  • 3 Tbsp (45ml) castor sugar
  • 1 cup (250ml) ice
  • Juice of 2 limes
  • 4 shots (100ml) white rum
  • PnP soda water or lemonade (depending on taste)

  • Place berries in a blender with castor sugar, ice and lime juice, and blend until smooth.
  • Stir in the rum, divide between 4 glasses and top with soda or lemonade before serving.
  • Tip: Serve this splendid summer cooler with these delicious crispy pita wedges and feta, lemon honey and pine nuts.

Bubbly bliss
If you don’t have much time, but want to serve something glamorously festive, this sparkling cocktail is just the ticket. It’s simple yet elegant, and looks übercool in champagne flutes.

  • 1 punnet (400g) PnP frozen raspberries
  • 2 Tbsp (30ml) castor sugar
  • 1 bottle sparkling wine

  • Blitz the frozen berries and castor sugar together and spoon about a 1-2 Tbsp into each flute.
  • Top with sparkling wine before serving.
  • Tip: For an ultra-glam affair, serve your bubbly cocktails with salmon and cucumber twirls.

Festive fruit punch

Perfect for outdoor entertaining, this delicious summer staple packs quite a punch.

  • 1 orange, sliced
  • 1 lemon, sliced
  • 1 cup (250ml) PnP mixed berries (slice the strawberries)
  • Half a cucumber, sliced or peeled in ribbons
  • Handful of mint
  • 1 cup (250ml) Pimm's liqueur
  • 3 shots (75ml) vodka
  • Ice
  • 3 cups (750ml) lemonade

  • Toss the sliced orange and lemon in a large jug with the mixed berries, cucumber and mint.
  • Pour in the Pimm’s and vodka and stir well.
  • Add two cups of ice.
  • Top with lemonade and serve in large glasses.

Tip: Serve with crispy bowls of baby marrow tempura with lots of lemon wedges.

Quick wine spritzer
Living near the glorious Cape Winelands means that wine is part and parcel of my laidback lifestyle, and there’s hardly a better way to spruce up a cool, crisp white than in a decadent wine spritzer.

What’s more, they’re light and low in alcohol – so it’s the perfect drink for daytime entertaining.

The ratios for wine to soda is pretty simple:

Mix 1 glass of white wine with ½ glass of soda water and serve.

Liquid sensations

Sweet cocktails are splendid alternatives for dessert and this choc-mint vodka surprise truly hits the spot.

  • Chop or grate 3 (80g) slabs of mint chocolate into a bottle filled with 2 cups of vodka.
  • Screw the lid back on.
  • Immerse the bottle in simmering watering for a couple of minutes until the chocolate melts.
  • Shake to combine ingredients and leave it to cool before serving chilled in martini glasses.

Happy holidays and drink responsibly!
