Watermelons were first harvested by the ancient Egyptians. A sweet way to keep hydrated, they provide dietary fibre and are packed with the antioxidant, lycopene.

 

  • Smooth shaking: Blend diced watermelon, yoghurt, a couple of ice blocks and a few sprigs of mint until smooth. Serve chilled.

  • Grilled wedges: Griddle slices of watermelon in a searing hot griddle pan. Add a dash of balsamic vinegar and a teaspoon of sugar to the pan over a low heat. Reduce. Serve drizzled on goat’s cheese and melon.

  • Salty sweet: Toss diced watermelon and feta together. Serve sprinkled with dukkah, seeds or chopped nuts.

  • Showstopper: Toss wedges of watermelon with rocket, smoked salmon and crispy bacon bits.
