New York-style cheesecake is a showstopper any time it's served... Here are some inventive topping ideas to make it even more irresistible.
Find the Classic Cook recipe for New York-style cheesecake in the August issue of Fresh Living magazine, then spice it up with these exotic toppings
Coconut meringue: Whisk 3 egg whites until soft peak stage. Gradually add 2/5 cup castor, whisking continuously, until thick and glossy. Fold through 2/5 cup toasted coconut. Spoon onto cheesecake and spread it to the edges. Bake at 220°C for 5-10 minutes or until golden in colour.
Caramel treat: Soften caramel treat and spread liberally onto cheesecake.
Apricot and citrus: Finely slice citrus peel and place in a saucepan of simmering sugar sweetened water for a few minutes. Drain and dry with kitchen paper. Add a dash of lemon juice to smooth apricot jam and spread onto cheesecake. Scatter with peel and serve.
Strawberries 'n cream: Whip sweetened cream to soft peak and spoon onto cheesecake. Scatter with sliced strawberries and grated chocolate and serve.
