2 cups PnP organic flour
1 tsp PnP salt
2 tbsp PnP canola oil
1 tbsp cachaca, or vodka (optional)
1 tbsp PnP white wine vinegar
125 ml water
Filling
205 grams tomato and onion mix
1 tbsp PnP brown sugar
1 tbsp PnP balsamic vinegar
1 tbsp oregano, chopped
2 tsp crushed garlic
1 cup PnP cheddar cheese, grated
- Mix pastry ingredients together
- Knead for a minute then set aside to rest for 10 minutes
- Roll small pieces of dough into 10x10cm sized squares
- Mix filling ingredients together
- Top one half of each square of dough with a generous dollop of filling Brush edges of dough with water and fold to enclose filling
- Crimp with a fork to seal
- Heat 2cm oil in a pan and fry pastries until golden all over
- Drain on kitchen paper and serve warm
- Makes 10
