Granny's sticky chicken

My Gran made this for us whenever we went on holiday to the Eastern Cape. It's a family recipe that's been passed down through the years, and it's delicious! Awesome served with a salad and crusty bread (so you can mop up the sauce.)

What I like about this recipe: Besides the extremely fond memories attached to it, I absolutely love the sweet and tangy flavours of the Apricot Jam & Mayonnaise... It's also incredibly sticky, and the best part of the meal is probably scraping the bottom of the tray for all the good bits (we used to fight over this as kids, and I still love doing.)

Method

  • Pre-heat oven to 180°C
  • Trim the chicken pieces of all excess fat and place in an oven-proof dish
  • Mix together the apricot jam, mayonnaise & brown onion soup and pour over chicken pieces
  • Season with salt & pepper and cook until sauce is bubbly and chicken pieces are cooked
  • Serve with a large green salad and crusty bread
