Method

Makes 1 large oval loaf

  • Mix dry ingredients in a large bowl.
  • Whisk wet ingredients together. Make a well in the centre and add wet ingredients.
  • Mix to form a soft dough.
  • Tip dough onto a floured surface and knead for 5 minutes or until smooth and slightly elastic (rye flour isn’t as elastic as wheat).
  • Shape dough into a high oval loaf and place on a greased baking tray.
  • Cut a few criss-cross slashes into top of loaf and dust with flour.
  • Leave dough in a warm place to double in size.
  • Bake for 1 hour at 200˚C for 20 minutes; then reduce the temperature down to 180˚C for 40 minutes, or until the bread is hollow sounding when tapped.
  • Cool on a rack.
