Method

For the peach trifle: 

  • Prepare peach jelly according to package instructions. Pour into a 3-litre-capacity bowl. Refrigerate for 30 minutes until just set.
  • Add peach halves and chill until set.
  • Slice vanilla Swiss roll into 1cm slices and cut each slice in half. Dip in sherry or vanilla simple syrup and arrange along the edge of the bowl, on top of the jelly layer.
  • Add vanilla custard.
  • Dollop chantilly cream on top.
  • Decorate with meringues and pomegranate to serve.

For the triple chocolate trifle:

  • Spoon chocolate mousse into base of glass bowl.
  • Top with brownie squares.
  • Spinkle over raspberries.
  • Smooth over chantilly cream.
  • Top with scoops of chocolate ice cream.
  • Decorate with cherries and chocolate balls to serve.

For the Peppermint Crisp trifle: 

  • Place half the Madeira cake in the base of a glass bowl.
  • Pour over half the sherry or vanilla simple syrup.
  • Pour over half the caramel.
  • Sprinkle over half the coconut flakes.
  • Repeat with another layer. 
  • Decorate with Peppermint Crisp to serve.
