"Almost sugar-free" baked pears with homemade dried fruit & muesli crumble

This dish makes for a delicious and healthy breakfast too. Replace pears with apples and use a raw oats-based muesli (e.g. Thistelwood) if you prefer.

Method
  • Preheat oven to 180°C.
  • Using a melon baller or metal measuring spoon, scoop out cores of pears.
  • Mix topping ingredients together and spoon over pears.
  • Bake for 20 minutes or until golden and soft.
  • Mix custard powder with milk.
  • Heat milk to just below boiling. Add sweetener and vanilla. Stir through custard powder mixture and cook until thickened.
