"Almost sugar-free" scones with sugar free strawberry jam

Stir jam regularly as the sweetener tends to make it catch. Serve jam on homemade low GI muffins and skip the cream for a healthier alternative.

RECIPE TYPE:Condiments and marinades
 
Method
  • Place all jam ingredients into a saucepan.
  • Stir over a gentle heat until sweetener has dissolved.
  • Wash any sugar crystals off inside of saucepan with a pastry brush dipped in a little water.
  • Increase heat and allow to boil for 6-7 minutes, using a spoon to skim off any scum that rises to the surface.
  • Remove from heat and test to see if jam is ready. If not, cook a little longer (see cook’s tip).
  • Pour into a sterilised jar. 
  • Serve with warm PnP scones and reduced-fat cream.
  • For a healthy alternative, skip the cream and serve on homemade low GI muffins. 


Cooking tip

  • Spoon jam onto a chilled saucer, allow to cool, then drag your finger through the jam. If a wrinkle appears on the surface, it's done. 
  • Store jam in a sterilised jar and refrigerate for up to a month.
