Method
  • Heat oil in a large pan.
  • Add cumin seeds, mustard seeds and curry leaves and fry until they begin to splutter.
  • Add garam masala, turmeric and chilli powder.
  • Add potatoes and mix well to coat with spices. Add salt to taste.
  • Cover and fry over a medium-low heat, stirring frequently. You may need to add a splash of water to stop potatoes from sticking and burning.
  • When potatoes are tender and coated with spice, add a little grated fresh garlic.
  • Garnish with coriander leaves and serve.
