Method

What to do

  • Make 3 deep slits into the top of each chicken breast.
  • Finely chop anchovies, lemon peel, garlic and parsley.
  • Moisten with a little lemon juice and season with salt and pepper
  • Stuff mixture into each of the slits.
  • Place chicken breasts into a small roasting pan
  • Drizzle a little stock, wine or verjuice around the chicken, then add remaining lemon juice
  • Roast in a preheated 200 C oven for 35 – 40 minutes.
  • Serve with the pan juices
