Apple bake with raisin

Baked fruit is delicious with Greek yoghurt, ice cream, custard or whipped cream.

Method

Makes 10 servings or 2 x 22cm pie dishes:

  • Preheat oven to 180ºC with the rack in middle position
  • Butter 10 x 9 x 5cm deep round single-serve ramekins


Caramelised fruit:

  • Melt butter in a large, heavy-based pan
  • Stir-fry fruit until browned
  • Add honey, salt and raisins.
  • Cook until a thick syrup forms
  • Add lemon rind
  • Allow to cool


Cake mixture:

  • Cream butter until soft and pale
  • Add 1 egg and 1 Tbsp cake mix at a time, beating well after each addition.
  • Add cinnamon and remaining cake mix
  • Fold through  half the cake mix and half the apple juice
  • Fold in remaining apple juice and cake mix u ntil just blended gently stir in cooled fruit
  • Spoon  mixture into prepared dish/es
  • Bake for about 35-40 minutes (depending on dish size)
  • Melt all honey glaze ingredients  together
  • Spoon over hot bakes as soon as they come out of oven
  • Serve warm or at room temperature
  • Place  oven rack in middle of oven and preheat to 190ºC


Filling:

  • Coarsely grate  unpeeled golden delicious apple
  • Mix with melted butter,  brown sugar, raisins, pecan nuts, oats, lemon zest,  cinnamon and salt. 
  • Cover and set aside
  • Cut off a thin slice from the bottom  of each Granny Smith apple so they stand  flat
  • Cut a 1cm slice ‘lid’ off the top of each apple and set aside
  • Peel apples and generously hollow out the centres
  • Heat  remaining butter in an ovenproof frying pan.
  • Cook apples, top-side down, until browned
  • Turn over
  • Stuff apples with filling and heap remaining filling on top
  • Add sugar and apple juice to pan
  • Bake for 20 minutes
  • Place  reserved  ‘lids’ on apples and bake for a further 10 minutes
  • Serve drizzled with pan juices and Greek yoghurt or ice cream
