Method
  • Pre-heat the oven to 160°C
  • In a small pot, combine the apple slices, sugar, raisins, ground cinnamon, cloves and lemon juice. Simmer for 5 minutes.
  • Dissolve the cornstarch in the water and add to the mixture
  • In a large bowl, beat the butter and sugar together. Add the beaten egg and whisk the mixture until light and fluffy.
  • Sift all the dry ingredients together and add to the butter mixture, mixing to form a soft dough
  • Press half of the pastry into a greased pie dish (23cm), making sure the base and sides are covered. Spoon the apple filling onto the pastry and spread the mixture equally.
  • Coarsely grate the leftover pastry over the filling and bake the tart for an hour
  • Dust with icing sugar and serve hot or cold with whipped cream


Variation

  • A can of pie apples can replace the fresh green apples.
