Method
  • Preheat oven to 180 degrees C.
  • Place all filling ingredients except cornflour into a saucepan. 
  • Stir over a low heat until sugar has dissolved. 
  • Increase heat slightly and simmer for 5-10 minutes until rhubarb and apples begin to soften. 
  • Mix cornflour with 2 Tbsp (30ml) water and stir into filling mixture.
  • Bring to the boil, stirring continuously, until sauce thickens. Remove from heat and cool.
  • Place flour, sugar, oats and salt into a bowl and rub in butter until it resembles breadcrumbs. Add almonds and toss them through the mixture.
  • Pour cooled filling mixture into a pie tin or dish and crumble over the topping – be generous, as the topping does tend to bake down in the oven.
  • Bake for 40-45 minutes or until crumble is golden and cooked through.
  • Serve warm with vanilla custard.
