Method
  • Combine the grated apple, breadcrumbs, nuts, spring onion, mixed herbs, butter and stock. Mix gently.
  • Flavour with salt and pepper.
  • Spoon ¼ of the mixture into one fish cavity. Close the cavity with toothpicks. Repeat the process for all four fish.
  • Prepare an indirect fire with a drip pan in the middle, place fish on cooking grate above drip pan.
  • Cover and cook for 20-25 minutes or untill fish begin to flake easily.
  • While the fish are cooking, mix the balsamic vinegar, olive oil and orange juice together.
  • Place the lettuce and strawberries in a bowl.
  • Remove fish from grill.
  • Remove skin and bones from fish using a Santoku knife.
  • Serve on top of the lettuce and stawberry salad and dress with vinaigrette.
