Method
  • Add onion and garlic to frying pan. Cook, stirring occasionally, for 3 to 4 minutes or until tender.
  • Sprinkle Ras el Hanout over the onion and stir it in. Stir in apricot juice and the apricots.
  • Bring to the boil and reduce for a while to thicken. 
  • Meanwhile, place the couscous in a glass bowl. Pour over 250ml boiling water, cover and stand for 5 minutes or until water has been absorbed. Stir with a fork to separate grains.
  • Spoon couscous onto plates. Place the chicken on top of the couscous, spoon the sauce over the chicken and sprinkle with parsley.
