Crispy fried fish in a light curry sauce.

Method
  • Heat oil in a saucepan and fry spring onions and both pastes for a minute.
  • Add lemongrass, lime leaves and juice, fish sauce and coconut milk. Cover and simmer for a few minutes.
  • Add vegetables and cook until just tender.
  • Heat 4cm oil in a pan.
  • Season fish and dust with flour.
  • Mix batter ingredients together.
  • Dip fish in batter to coat and fry in batches until golden and cooked through.
  • Drain on kitchen paper.
  • Divide curry between 4 bowls and top with fish and a generous helping of coriander.
  • Serve with steamed rice.
