Method
  • Heat oil and butter in a saucepan and fry onion until it starts to brown.
  • Add garlic, spices, coconut and tomatoes and cook over a medium heat for about 10 minutes.
  • Add lemon juice and peel, stock, potatoes and fish, and simmer until fish is just cooked through.
  • Season and serve with poppadums, chopped coriander and a tomato and onion sambal.
