Method
  • Preheat oven to 180°C.
  • Sauté onion and garlic in oil until soft, then set aside to cool slightly.
  • Mix with remaining filling ingredients and season well.
  • Shape mixture into balls and stuff into the cavity of each artichoke.
  • Heat a glug of oil in a pan and sear artichokes and meat.
  • Place in a roasting tray and add stock. Bake for 20-25 minutes until cooked through and artichokes are tender.
  • Serve with warm pita breads and a chopped salad.
