Asparagus and goat's cheese puff pastry galette

This moreish free-form tart is simple to make, looks good and is the perfect dinner party start or light meal.

RECIPE TYPE:Light meals
 
Method
  • Preheat oven to 200°C.
  • Unroll pastry on a lightly floured surface. 
  • Roll slightly thinner.
  • Place on a greased baking tray and score a 1cm border around the edge.
  • Chill in the fridge.
  • Beat cheese, garlic, herbs and egg together. Season.
  • Spread mixture over the pastry, taking care not to get any on the border.
  • Arrange asparagus spears on the pastry and dot over halved tomatoes. 
  • Drizzle with a little olive oil.
  • Brush border with beaten egg to glaze.
  • Bake for 15 minutes, then reduce heat to 180°C and bake for a further 25 minutes, or until puffed and golden.
  • Slice into individual portions, scatter with rocket and micro-greens, then serve.
