This baby marrow and butternut bake is a hearty, healthy meal daily quota of five servings of vegetables!

Method
  • Drain any excess moisture from butternut and roughly mash.
  • Heat oil in a saucepan and fry onion until golden.
  • Add garlic and mushrooms and fry for another 2 minutes.
  • Add tomatoes and simmer for 5 minutes.
  • Remove from heat and stir in spinach and oregano.
  • Spread a few spoonfuls tomato mixture in the bottom of an ovenproof dish and top with a layer of sliced baby marrow and some mashed butternut.
  • Repeat layers until all mixture has been used, then top with ricotta.
  • Bake for about 40 minutes at 180°C, or until golden and baby marrows are tender. Serve.
