Method
  • Heat stock in a saucepan
  • Place 2 Tbsp oil in another saucepan and  sauté onion and garlic until soft
  • Add rice and fry for about a minute or until slightly translucent
  • Add wine and cook until liquid has evaporated
  • Add a ladleful (about 1/3  cup) stock to rice, reduce heat and stir until stock has been absorbed into rice
  • Continue adding stock, a ladleful at a time, and stir until rice has softened into a creamy mixture
  • Fry butter, remaining oil, lemon juice, shrimps, baby marrows and seasoning in a non-stick pan until golden   
  • Stir shrimp mixture through cooked rice
  • Season, scatter with lemon peel and serve with a spoonful of cream cheese


More good ideas

  • Replace cream cheese with feta or grated parmesan
