  • Beat egg and soda water together
  • Sift flour and salt together and gently fold into egg mixture
  • Don’t over-mix
  • Dip baby marrows into tempura batter and deep-fry until crisp and golden
  • Serve with sweet chilli and soy sauce and lemon wedges
