Bacalhau with potatoes

Bacalhau is salted cod, and is an iconic Portuguese dish.

Method
  • Preheat oven to 200˚C.
  • Rinse cod under cold running water to remove any surface salt, then place in a large bowl, cover with cold water and refrigerate for 24 hours. 
  • Refresh water 5 or 6 times.
  • Strain fish in a colander, then boil gently in a pot of fresh water for 10-15 minutes or until it flakes easily. 
  • Strain again and set aside.
  • Heat 3 Tbsp (45ml) oil in a pan, fry onions until golden, then add garlic and remove from heat.
  • Flake fish into a large bowl, removing skin and bones. 
  • Add onion mixture, nutmeg, white pepper and 1 Tbsp (15ml) olive oil. 
  • Toss to combine.
  • Place a layer of potatoes in the bottom of an ovenproof dish and top with a layer of fish. 
  • Repeat with remaining ingredients ending with a layer of potato. 
  • Dot with butter and drizzle generously with olive oil.
  • Bake for 20-30 minutes or until potato is golden and crispy. 
  • Serve topped with boiled egg, parsley and olives.
