Use fresh or frozen hake for this dish. It is a delicious yet healthy way to eat fish.

Method
  • Preheat oven to 200°C.
  • Heat a glug of oil in a pan.
  • Season fish and sear on one side for colour.
  • Place fish and potatoes on a large sheet of foil. Season and cover with sliced lemon.
  • Pour over wine and wrap up foil to create a parcel. Bake for 10 minutes or until fish is just cooked. Remove from foil.

Salsa verde:

  • Mix together salsa ingredients and season.
  • Drizzle over fish and potatoes and serve.
