Method
  • Preheat oven to 180°C
  • Lightly grease a medium-sized roasting pan


Syrup

  • Combine syrup ingredients in a small pan and bring to the boil
  • Reduce heat and simmer for 7 minutes or until slightly thickened. Allow to cool.


Baklava

  • Halve phyllo sheets lengthways, or to fit in pan
  • Roughly chop raisins, sultanas, dried fruit and nuts. Mix with sugar and cinnamon.
  • Place a sheet of phyllo pastry in pan. Brush with butter and cover with another sheet.
  • Sprinkle a thin layer of fruit mixture over pastry. Cover with 2 sheets of buttered phyllo.
  • Repeat with remaining fruit mixture and phyllo sheets
  • Cut into equal-sized diamond-shaped squares
  • Bake for 30 - 35 minutes, or until edges are crisp and top is golden brown
  • Spoon cooled syrup over hot baklava and leave to cool for at least 4 hours
