Balsamic glazed lamb chops with authentic Tabbouleh

Method
  • Prepare a direct fire to a moderate heat.
  • Season lamb chops with salt and pepper.
  • In a small bowl, combine balsamic vinegar, honey and garlic. Brush lamb chops with glaze.
  • Grill lamb chops for 5 minutes on both sides, or until cooked, brushing the chops with the glaze periodically.
  • To make the Tabbouleh, stir together bulgur wheat and 1 tbsp olive oil in a heatproof bowl. Pour boiling water over, then cover bowl with plastic wrap and allow to stand for 15 minutes.
  • Drain in a sieve, pressing on bulgur wheat to remove any excess liquid.
  • Transfer bulgur wheat to a bowl with remaining ingredients add the additional olive oil and toss until well combined.
  • Season with salt and pepper.
  • Serve the balsamic glazed lamb chops with the Tabbouleh.

Dietitians Notes:

Bulgar wheat is an excellent example of a high fibre starchy food!  Use it to replace white rice, pasta and potatoes in your day-to-day cooking.
