Method
  • Preheat oven to 180°C.
  • Toss mushrooms, garlic, tomatoes, thyme and balsamic with oil on a roasting tray.
  • Roast for 20 minutes or until cooked through.
  • Cook polenta in salted water according to package instructions.
  • Add parmesan and butter and mix well.
  • Season if needed.
  • Spread polenta on a serving dish, scatter over mushrooms and tomatoes and drizzle with pan juices.
  • Scatter with rocket and serve.
