To hull the strawberries (remove the leaves), angle a small sharp knife and slice in a circular motion around the leafy tops and into the pale flesh directly underneath.

Method
  • Freeze loaf for 30 minutes until firm.
  • Preheat oven to 150ºC.
  • Use a sharp serrated knife to slice loaf as thinly as you can (about 2–3mm slices).
  • Place slices on a baking paperlined tray and bake for about 15 minutes or until dry and crispy. Cool.
  • Hull strawberries, halve or quarter, and toss with castor sugar, vinegar and basil leaves.
  • Marinate for 30 minutes.
  • Spoon into glasses and top with a dollop of mascarpone.
  • Serve immediately with Madeira melba crisps.
