Method
  • Make muffins according to packet instructions.
  • Whisk milk with the rest of custard ingredients, then slowly whisk in remaining hot milk.
  • Cook over a medium heat until thickened, 5 minutes. Cool.
  • Heat sugar and salt in a nonstick pan over a low heat. 
  • Swirl the pan as it caramelises – don’t stir.
  • Add milk and simmer until caramel has dissolved and milk has thickened, 5 minutes. Cool.
  • Caramelise sugar as before.
  • Pour onto greased foil and top with nuts. Cool before chopping.
  • Toss bananas with sugar and place in a hot pan for 30 seconds to caramelise.
  • Line a glass bowl with 4 sliced muffins. Drizzle with brandy.
  • Spoon over custard and layer with bananas and cream.
  • Drizzle with caramel sauce, scatter over brittle and serve.
