Method

Makes 1 large two-tiered cake

  • Preheat oven to 180°C.
  • Line 2 x 20cm cake tins with baking paper and coat with nonstick spray.
  • Pour water and coffee into a bowl and stir in cocoa powder. Set aside to cool.
  • Cream egg yolks and sugar together until light and fluffy.
  • Add oil and vanilla and mix well.
  • Sift flour, baking powder and salt together.
  • Add coffee-cocoa mixture to egg mixture. Combine.
  • Fold in flour mixture, then add melted chocolate and mix well.
  • Beat egg whites until stiff peaks form and fold into batter.
  • Divide between prepared tins.
  • Bake for 30-45 minutes until a skewer inserted into the centre of cakes comes out clean.
  • Cool in tins for 5 minutes, then turn out onto a rack and cool completely.
  • Mix cocoa powder, icing sugar and butter together until smooth.
  • Spread cake with icing and top with chocolate balls and berries.
