Method
  • Heat a glug of oil and fry onions and garlic until soft. Add all the remaining ingredients and simmer for 45 minutes or until vegetables are soft and beginning to break up.
  • Season and serve with crusty bread.


For beef & bean soup:

  • Add 500g beef shin when frying onions and allow meat to brown.
  • Add 1 bag (500g) speckled beans that have been soaked overnight, 1 Tbsp (15ml) ground coriander and 2 tsp (10ml) paprika when adding remaining ingredients and simmer for 1½ hours (adding more water as it cooks) or until meat and beans are tender.


For minestrone:

  • Add 1 can (410g) chopped tomatoes when adding the remaining ingredients and simmer for 30 minutes.
  • Add 2 cups (500ml) small pasta shells and 2 cups (500ml) additional vegetable stock and simmer for 15 minutes longer.
  • Serve drizzled with PnP fresh basil pesto.
