These little gems are a lovely tea-time treat.

Method
  • Preheat oven to 180°C.
  • Grease 2 muffin trays (12 cups each).
  • Sift flour and icing sugar together.
  • Rub butter in with your fingertips or pulse in a food processor.
  • Add enough iced water to bring pastry together. Shape into a disc.
  • Wrap dough in cling film and place in fridge for 20 minutes.
  • Roll dough to about 5mm thick.
  • Cut 24 x 8 cm circles out with a round cookie cutter, and 24 stars – or any other shape of your choice – that are as wide as a muffin tray cup.
  • Line muffin tray with dough circles. They should stick out a little (almost 5mm) above the tin (as dough shrinks).
  • Cover and leave in the fridge, with the star pastry tops, for at least 30 minutes. 

For the filling:

  • Simmer ingredients together for 20 minutes, or until thick and almost jammy. 
  • Remove peels, cloves and star anise. Cool. 
  • Spoon into lined muffin trays, top with stars and bake for 25 minutes or until golden. 
  • Dust with icing sugar before serving.
