Best-ever hummus with crispy lamb bits

Inspired by Yotam Ottolenghi and Sami Tamimi's recipe in their Jerusalem cookbook.

Method
  • Mix lamb with seasoning, garlic, spices, lemon juice and a glug of oil. Leave to marinate.
  • Place ¾ of the chickpeas in a blender with remaining hummus ingredients and pulse until completely smooth.
  • Toss together salad ingredients and squeeze over lemon juice.
  • Heat a pan over high heat and toss in lamb and reserved chickpeas. Cook until well browned but still slightly rare in the middle.
  • Spread hummus on a plate, drizzle with olive oil and scatter over hot lamb. 
  • Serve with warm toasted pitas and salad.
