Method
  • Preheat oven to 180ºC.
  • Heat oil and fry onion, garlic and bacon until onion softens and bacon begins to crisp.
  • Toss in chickpeas, wine and herbs and simmer until liquid is reduced by half.
  • Stir through spinach and olives. Top with fish.
  • Drizzle with olive oil and season. Bake for 15 minutes or until fish is just cooked.
  • Serve with blanched beans.
