Method
  • Heat a glug of oil in a large pan and fry onion until it begins to brown.
  • Add garlic, ginger and chilli and fry for a few minutes.
  • Move onion mixture aside in pan to create space and add a little more oil.
  • Toss in spices and fry until they begin to pop.
  • Mix into onion.
  • Add potatoes and curry powder and gently stir-fry until golden. Season well.
  • Fry eggs until crispy around the edges but still runny in the middle, or until cooked to your liking.
  • Serve potatoes scattered with tomato, onion and coriander, topped with eggs.

 

More good ideas

  • Add diced brinjal when sautéing the potatoes.
  • Serve potatoes with sliced chillies for extra heat.
