Method
  • Place syrup ingredients in a saucepan and heat gently until sugar has dissolved. 
  • Boil for 10 minutes and cool completely before chilling in the fridge.
  • Cut each spring roll wrapper into 4 strips, cutting a few into thinner ribbons.
  • Lay strips across a work surface. 
  • Fold each one in half and tie in the middle with a thinner ribbon.
  • Heat 4-5cm oil in a pan and fry bow-ties in batches until golden.
  • Remove from oil and dip into syrup for a few seconds.
  • Place on a baking rack to cool completely.
  • Drizzle with remaining syrup and serve with peach slices.
