Method
  • Cut 4 squares of foil
  • Double up and place a round of feta on each square.
  • Top with the tomatoes
  • Sprinkle with origanum, thyme, sea salt and freshly ground whole black peppercorns 
  • Drizzle with a little olive oil and balsamic glaze
  • Wrap up and braai for about 10 minutes or until soft
  • Serve with the sliced, toasted Panini


More ideas

  • Replace the origanum and thyme with a ½ teaspoon  of paprika, and add a ¼ cup of diced chorizo sausage to the tomatoes.  Drizzle with the olive oil, season with freshly ground whole black peppercorns, and wrap up in foil. Braai for about 10 minutes or until soft.
