Method
  • Prepare a large fire with medium coals.
  • Score fish on both sides.
  • Stuff fish cavity with sliced fennel.
  • Chop fennel fronds finely.
  • Mix chopped fennel fronds, lemon zest and juice, paprika, salt, pepper and olive oil to form a paste.
  • Rub outside of fish generously with paste.
  • Heat a braai grid over the fire to prevent fish from sticking.
  • Place fish on the grid and cook for about 20 minutes, turning frequently.
  • Toss salsa ingredients lightly. Season and dress with olive oil.
  • Serve fish with salsa.
