Method
  • Place eisbein and half the ginger and salad onions in a pot. 
  • Cover with water and bring to the boil.
  • Reduce heat and cook for 11⁄2-2 hours or until tender. remove and set aside.
  • Sauté remaining salad onions and ginger in a little oil.
  • Add soy sauce, rice wine, sugar, water, oyster sauce and salt and cook over a low heat until bubbling.
  • Add eisbein to sauce and cook for 10 minutes. remove and set aside.
  • Mix cornflour with a little water in a separate bowl, add to sauce and stir until thickened.
  • Stir in sesame oil, pour over eisbein and serve with steamed rice on the side.
