MAKES 12-13 LARGE ROLLS
Combine dry ingredients in a large mixing bowl.
Mash potato and add milk and butter. Mix until butter has melted and allow to cool.
Beat eggs, add to potato mixture and add mixture to dry ingredients. Knead for 8 -10 minutes, or until a soft, but smooth, elastic dough is formed.
Placedough in a well-oiled bowl, cover and leave to rise, until doubl
ed in size. Butter a large, flat baking sheet (38 x 26 x 1.5cm) and line base with baking paper.
Knock back dough, knead well.
Roll into a thick sausage shape and cut into 12 equal pieces.
Roll each piece into a ball on a well-floured surface and place in prepared pan. Allow to rise until doubled in size.
Preheat oven to 200˚C.
Bake for 30 - 40 minutes, or until golden. Allow to cool.
Mix anchovy butter ingredients together and spread onto rolls.
