Method
  •  Prepare a direct fire to a high heat.
  • Brush aubergine with 2 tbsp olive oil and season with salt and pepper.  Place on the grill and allow to colour well on each side. Remove from the fire and set aside. Once cool, cut into cubes.
  • Allow the fire to cool down to a moderate temperature and place the Weber manturion griddle on the weber.
  • Add 2 tbsp olive oil to the Weber Manchurian griddle and gently fry ginger and garlic. After a minute add the aubergine and balsamic vinegar and cook down. Remove from heat and set aside.
  • In a serving bowl, combine brown rice, toasted almonds, lemon juice, spring onion and all the aubergine.
  • Season with salt and pepper and serve immediately.

Dietitians Notes: 

Instead of buying roasted nuts which have salt and fat added to them, buy raw and simply toast them yourself in a dry pan over heat at home.
