This recipe originated when a restaurant chef decided to perk up some leftover chicken curry by adding tomato and butter.

Method
  • Remove skin and bones from chicken. Cut or shred meat into long strips.
  • Place tikka sauce, tomatoes, sugar, seasoning and coconut milk in a saucepan and bring to a gentle boil.
  • Add chicken and allow to heat through
  • Remove from heat and pour over melted butter
  • Top with fresh coriander
  • Serve on rice with sambals
