Method
  • Use a spiral slicer or a potato peeler to cut 2-3 butternuts into thin ribbons – this is a labour of love! 
  • Toss with olive oil on a baking tray. 
  • Dry in a low 100°C oven for 2-3 hours, or until crispy. 
  • Season with fine salt and serve with beer.
