Cajun blackened chicken with sweetcorn avocado salsa

Method

For the chicken:

  • Heat a pan till very hot. Rub some Cajun Blackening Spice into the chicken. 
  • Put the chicken, skin side down, dry onto the hot pan and allow to blacken on the outside. 
  • Turn over and put a knob of butter on top, turn down the heat and cook until done.  


For the salsa, which you can make ahead of time:

  • Pre-heat the grill and paint the sweetcorn lightly with the olive oil. 
  • Grill them, turning constantly for about 8 minutes until well toasted. When cool, strip off the kernels with a  sharp knife.
  • Mix the corn with the other ingredients and season well. Taste for seasoning and serve with the chicken.
