In Spain they use long leek-like onions to make this dish, they are first barbecued, then sandwiched between two roof tiles and cooked until they're soft and sweet. This dish is a healthy source of the anti-oxidant from tomatoes, called lycopene. Lower the fat content by using less oil.

Method
  • Preheat oven grill to maximum setting.
  • Line a baking tray with foil.
  • Place tomatoes on tray and grill until charred.
  • Turn and repeat on the other side.
  • Scrape flesh from tomatoes and place in a blender with remaining ingredients.
  • Pulse to form a smooth paste.
  • Chargrill leeks in a hot griddle pan or over medium hot coals until blackened.
  • Wrap in foil.
  • Cook over coals or in a moderate 180ºC oven for a further 15 minutes.


To serve:

  • Peel off charred outer leaves and dip soft centres in sauce.
