Method
  • Slice baby marrows lengthways into strips
  • Blanch in boiling water for 1-2 minutes until just tender. Refresh in ice water and drain.
  • Place a few baby marrow strips, a slice of cheese and a little watercress onto each spring roll wrapper.
  • Season and roll according to packet instructions. Seal end with a little water.
  • Heat about 1cm oil in a pan and fry spring rolls until golden all over. Drain on kitchen paper.
  • Serve hot with sweet chilli sauce for dipping
