Cape brandy tart with pecan nuts

An all-time family favourite. Serve with whipped cream for a teatime treat.

Method
  • Preheat oven to 180ºC.
  • Sprinkle bicarb over dates.
  • Pour boiling water over dates and leave to cool.
  • Cream butter and sugar and beat in the egg until mixture is light and creamy.
  • Sift dry ingredients 2-3 times.
  • Use a metal spoon to fold in dry ingredients, dates and half the pecan nuts.
  • Pour into a buttered 25cm pie dish.
  • Sprinkle with remaining pecan nuts.
  • Bake for 45 minutes, or until dark brown.

 

Sauce:

  • Bring sugar, water and butter to the boil. Remove from heat and add vanilla and brandy.
  • Prick tart all over using a fork and pour warm sauce evenly over the whole warm tart.
  • Serve warm or at room temperature as a pudding with custard or ice cream.
