Method
  • Roll puff pastry out on a surface dusted with flour. 
  • Brush one side with beaten egg.
  • Fold into thirds, brushing with beaten egg in between layers.
  • Cut out big circles using a cookie cutter. Cut smaller circles inside each big circle to make a doughnut shape.
  • Fold remaining pastry together, roll out and repeat until all pastry is used.
  • Bring a pot of oil to a high heat. 
  • Fry pastry doughnuts and doughnut holes in oil until puffed up and golden. Remove and set aside on kitchen towel to cool.
  • Once cooled, pipe caramel into the centre of each doughnut and doughnut hole. 
  • Dust with icing sugar and serve with cherries.
